Paleo Pumpkin Soup

Serves: 4

Ingredients

1 tbsp olive oil

1 onion, diced

2 garlic cloves, minced

1 tsp paprika (extra for topping)

¾ pumpkin (approx. 650g) cut into chunks

500ml Organic Chicken Bone Broth

100ml coconut milk

Sprig of coriander

Method

  1. Heat 1 tbsp olive oil in a saucepan and cook garlic, paprika and finely chopped onion for 5 mins until the onion has softened
  2. Add chunks of pumpkin to the pan and cook for 10 mins until it has softened
  3. Pour chicken bone broth into the pan and bring to the boil. Simmer for 10 mins and season with salt and pepper
  4. Bring the soup to the boil and add coconut milk, then puree until you have your desired consistency (we love this soup a little chunky for texture)
  5. Serve with a sprinkle of paprika and coriander and enjoy!
