
Paleo Pumpkin Soup
Serves: 4
Ingredients
1 tbsp olive oil
1 onion, diced
2 garlic cloves, minced
1 tsp paprika (extra for topping)
¾ pumpkin (approx. 650g) cut into chunks
500ml Organic Chicken Bone Broth
100ml coconut milk
Sprig of coriander
Method
- Heat 1 tbsp olive oil in a saucepan and cook garlic, paprika and finely chopped onion for 5 mins until the onion has softened
- Add chunks of pumpkin to the pan and cook for 10 mins until it has softened
- Pour chicken bone broth into the pan and bring to the boil. Simmer for 10 mins and season with salt and pepper
- Bring the soup to the boil and add coconut milk, then puree until you have your desired consistency (we love this soup a little chunky for texture)
- Serve with a sprinkle of paprika and coriander and enjoy!
