
Miso Roasted Carrots
These Miso Roasted Carrots are a real gut-loving dish, and can be enjoyed as a side dish or eaten on their own for when you’re craving a bowl of hearty veg!
Ingredients
Assortment of organic carrots
1 tbsp miso paste (any type of miso)
2 garlic cloves, peeled and chopped
Sprig of thyme
50ml bone broth
1 tbsp olive oil
1 tsp sesame oil
Method
- Preheat the oven to 200°C
- In a bowl, combine the miso paste, bone broth, olive oil and sesame oil.
- Coat the carrots in the mixture and lay on a baking tray with the garlic cloves and thyme. Pour any leftover mixture over the carrots.
- Roast the carrots for about 30 minutes until they’re lovely and soft in the middle.
